What matters is being able to produce your evidence on the day of the audit: "the absence of evidence on the day of the audit constitutes a non-conformity" (arrêté du 6 juin 2019 on audit procedures). The electronic signature serves exactly that purpose — certain date, identification of the signatory, integrity of the document — and many certified organizations have gone paperless without losing compliance.
